Dried Pineapple

Selecting a good pineapple is more difficult thatn drying it. When choosing a pineapple, look for the yellow-golden color, especially on the bottom of the pineapple. Then pull a leaf from inside the top cluster of leaves. If it pulls out easily and feels like it has liquid inside it, then you (hopefully) have a good pineapple for drying. Underripe, green pineapples do not dry as well as pineapples that have the sugar developed - nor do they taste as good.
Cut the pineapple in half. Cut each half in three equal boat-shaped pieces. Flop each piece on its side and cut the core out of each boat. Remove the skin. Cut into 1/2-inch thick pieces. Place on dehydrator trays lined with insert sheets. Dry until the pieces are bendable but do not have any pockets of moisture. To determine the degree of doneness you may need to remove a piece from the dehydrator and let it cool. Make sure you try a piece of pineapple when it is still warm - it makes a yummy treat.
