Ingredients

  • Batter:
  • 3 cups soybean oil
  • 2 pounds fresh cod fillets
  • 1 1/3 cups self-rising flour (adjust to 1 cup self-rising flour & 1/3 cup cornstarch)
  • Note: Self-rising substitute equals 1 cup minus 2 tsp. flour, plus 1 1/2 tsp. baking powder, plus 1/2 tsp. salt
  • 1 cup water (try club soda)
  • 1 egg
  • 2 teaspoons granulated sugar
  • 2 teaspoons salt

Preparation

Step 1

1. Heat the oil in a deep pan to about 400°F.


2. Cut the fish into approximately 7 x 2-inch wedges.


3. With a mixer, blend the flour, water, egg, sugar, and salt.


4. Dip each fillet into the batter, coating generously, and quickly drop into the oil. (try dredging fish in plain flour first before coating with batter)


5. Fry each fillet until dark golden brown, about 5 minutes.


6. Remove from the oil and place on paper towels or on a metal rack to drain.
