Ingredients

  • 1/2 c EVOO
  • 1 bunch chopped green onions
  • 2-8 oz chopped spinach, well drained
  • 2 T dill
  • 3 large eggs, slightly beaten
  • 7 oz feta cheese
  • 1/4 t salt
  • 1/4 t pepper
  • breadcrumbs
  • 2 sticks butter
  • 40 sheets phyllo, defrosted in refridgerator.

Preparation

Step 1

Heat oven to 400 degrees. Saute onions in EVOO. Mix spinach,onions, dill, eggs, feta, s/p. Unfold 1 sheet phyllo, brush with melted butter, sprinkle with breadcrumbs. Repeat x 10. Spon in 3/4 c spinach mix along long edge of phyllo pile. Roll. Brush top with butter. Score. Repeat. Place on greased cookie sheet and bake 12 minutes.
