Ingredients

  • 1/2 c Dijon-style mustard
  • 1/3 c Honey
  • 2 tbsp plus 1/2 c mayonnaise, divided
  • 2 large potatoes
  • 2 c finely chopped ham
  • 1 c shredded swiss cheese
  • 1/4 c milk
  • 1/4 c finely chopped onion
  • 1 large egg, beaten
  • 1 tsp prepared mustard
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 3 1/2 c crushed cornflakes

Step 1

For sauce, combine dijon style mustard, honey & 2 tbsp mayo in a small bowl & mix well. Chill, covered, to allow the flavors to blend, about 2 hrs.
For potato balls, peel the potatoes & cut into chunks. Combine the potatoes w/enough water to cover in a medium saucepan. Bring to a boil, boil until easily pierced w/a fork but not mushy, about 20 minutes, drain well.
Preheat the oven to 350, grease baking sheets.
Mash potatoes in a medium bowl w/a masher, stir in ham, swiss & remaining mayo, milk, onion, egg, mustard, salt & pepper. Mix well.
Shape the potato mixture into 1 inch balls, roll the balls in the cornflakes. Arrange the balls 1 inch apart on prepared baking sheets.
Bake until browned, about 30 minutes.
