Crispy onion rings

Ingredients
- 2 c. canola or safflower oil
- 1 yellow onion, cut into 1/4" rounds
- 1 c. buttermilk
- 1 c. all purposes flour
- 2 T. cornstarch
- Salt and freshly ground black pepper

Step 1
1- Heat the oil in a large, deep skillet over medium-high heat to about 375 or until a sprinkle of flour dropped in the oil sizzles.
2- Separate the onion slices into rings and place in a bowl with the buttermilk to soak.
3- Mix the flour and cornstarch together in a separate bowl and season with salt and pepper.
4- Remove the onion rings one at a time from the buttermilk, dip into the flour, shaking off any excess flour, and place directly into the hot oil.
5-Fry in small batches, 3-5 minutes per batch, until the onion rings are golden brown and crispy. Remove from the oil and place on a paper towel to drain. Season with additional salt and pepper if desired and set aside until ready to use.
