Ingredients

  • 1/2 large sweet onion
  • 2 tablespoons olive oil
  • 1 10 oz can chopped tomatoes with chilis
  • salt
  • ground coriander
  • ground cumin
  • large can black beans (undrained)
  • 1/2 medium orange

Preparation

Step 1

Saute 1/2 a large sweet onion (coarsely chopped) in 2 tablespoons olive oil.
Add 1 10 oz. can chopped tomatoes with chopped chilis.
Let all of that reduce while adding salt, ground coriander and ground cumin to taste.
Add a large can of black beans undrained and let simmer for about 15-20 minutes stirring occasionally.
About 1 minute before you turn off the heat add juice from 1/2 a medium orange.
Let sit 10 minutes before serving.
Serve with rice
