Ingredients

  • Glaze:
  • 2 cups flour (1 cup whole wheat flour can be substituted for 1 cup all-purpose flour)
  • 1/2 teaspoon salt
  • 1 tablespoon baking powder
  • 1/3 cup butter, room temp.
  • 1 cup sugar
  • 1 egg
  • 1 cup milk
  • 1 teaspoon vanilla extract
  • 3 1/2 cups unsweetened raspberries, fresh or frozen
  • 1 1/2 cups powdered sugar
  • 2 tablespoons milk
  • 1 teaspoon vanilla extract

Preparation

Step 1

Stir together the flour, salt and baking powder and set aside.

In a mixing bowl, cream the butter and sugar together. Add the egg, beating well. Alternately add the milk and vanilla with the flour mixture to the mixing bowl mixture and beat well. Spread the cake batter into a greased 9″x13″ baking dish. Spread the raspberries evenly over the top of the batter.

Bake at 350F for 30-35 minutes. Cool for 5 minutes. Combine the glaze ingredients and spread over the warm cake.
