I used a "store-bought" unbaked pie shell (instead of making a homemade tart shell). Made for Gary's Birthday, Chris' Birthday, Michael/Chris' Engagement 1995

Ingredients

  • 1/2# bacon, chopped
  • 1 medium onion, chopped
  • 3 firm-ripe tomatoes, chopped
  • 1 7-oz can diced green chiles
  • 1/2 teaspoon ground cumin
  • 1 cup shredded sharp Cheddar cheese
  • 1 medium-.size ripe avocado
  • 1/2 cup sour cream fresh
  • cilantro sprigs
  • Tart shell. (If you decide to make)
  • 1 1/2 cups all purpose flour
  • 1/2 cup firm, butter ormargarine -

Preparation

Step 1

Use a wide frying pan, cook bacon until crisp. Lift out, drain, set aside. Reserve small amout of drippings in pan. Add onion, cook until soft. Add tomatoes, green chiles, cumin. Cook, stirring until thick (15 min or so). Add bacon.

Spoon into baked pie shell; sprinkle with chee
Bake in 400 degree oven until cheese is melted (8-10 minutes). Pit, peel, slice avocado. Arrange over tart; garnish with sour cream and cilantro. Makes 6-8 servings


For homemade tart:

Mix, cut into pieces, Process or mix until mixture resembles fine crumbs. Add 1 egg. Mix or process until dough holds together. Press pastry into a 9-inch tart pan or pie pan. Bake at 325 degrees until golden brown (about 45 minutes)
