Wild Rice Soup

Ingredients
- 3 T Butter
- 2 T Onion, finely chopped
- 3/4 C Flour
- 5 15 oz. cans of chicken broth
- 3 C Wild Rice, cooked
- 2 C Half and half
- 3 T Cooking sherry (optional)
- 1/2 C Ham, diced
- 1/2 C Carrots, grated
- 4 T Slivered almonds
- 1 lb. Mushrooms, sautéed

Preparation
Step 1
1. Sauté onion in butter. Whisk in flour until smooth. Gradually add broth.
2. Cook, stirring constantly, until mixture slightly thickens.
3. Stir in rice, ham, carrots, almonds and mushrooms. Simmer 1-2 hours.
4. Blend in half and half and sherry. Heat to serving temperature.
