The summer Janet spent with the Aebi family in Switzerland, one of her favorite dishes was this. According to what she was told, a doctor named Bircher was working in a nursing home when he discovered the inhabitants weren't getting enough fiber and he devised this dish to help alleviate the problem.

- For 1 serving:
- 3 Tbs. uncooked rolled oats
- 3 Tbs. cold water
- 1 Tbs. lemon juice
- 1 Tbs. sweetened, condensed milk or honey
- 1 large unpeeled apple
- 2 Tbs. chopped nuts

Soak the oatmeal in the cold water until it is soft--preferably over night. At serving time, stir in the lemon juice and condensed milk or honey. Grate the apple directly into the muesli. Sprinkle with nuts. Add whatever fresh fruits are available. Mrs. Aebi always added sweetened, whipped cream as well.
NOTE: Depending on the type of oatmeal used, you may have to add a little more water to the oatmeal to make it the consistency of porridge. Instant oatmeal does not have to be soaked as long, but the muesli is better if allowed to stand for 10 minutes.
