ROASTED CAULIFLOWER WITH LEMON BUTTER

Ingredients
- 1 head of cauliflower
- 1/4 tsp salt
- 1/4 cup butter, melted
- 4 tsp lemon juice
- 1 tsp grainy mustard
- 1/4 cup freshly grated Parmesan cheese
- 2 tbsp chopped parsley

Preparation
Step 1
Cut cauliflower into florets to make about 6 cups. Cut into 1/2 thick slices; place in shallow 8 cup (2L) gratin dish and toss with salt. Roast in 400F oven for 20 minutes.
Mix butter, lemon juice and mustard, toss with cauliflower. Sprinkle with Parmesan cheese. Roast for 10 to 15 minutes longer or until tender and golden. Toss with parsley. .
