Ingredients

    loaf Italian or brioche bread, 14-16in long, sliced into 1 1/2in slices

  • 1/4

    cup unsalted butter, softened

  • 1/4

    cup golden raisins or dark raisins, or a combination

  • 2

    Tbs dried cranberries

  • 2

    Tbs sliced almonds

  • 2

    Tbs chopped crystallized ginger

  • 3

    large eggs, beaten

  • 1

    cup half and half

  • 1/4

    cup sugar

  • 2

    Tbs unbleached all purpose flour

Directions

Spray the baking dish with nonstick cooking spray. Butter the bread slices on one side and fit the slices, buttered side up, in the bottom of the prepared baking dish. Sprinkle the raisins, cranberries, almonds, and ginger over the top of the bread. In a bowl, combine the eggs, half and half, sugar, and flour, whisking well to combine. Pour the egg mixture over the bread slices. Freezing Instructions: Cover and freeze. To thaw and serve: Thaw the casserole in the fridge. Preheat the oven to 350. Bake, covered, for 25min, then remove the cover and bake 20min more.
