Ingredients
- 2 cups fresh sauerkraut
- 1 package low-fat breakfast sausage, such as Jimmy Dean’s 97% fat-free
- 1/2 medium onion, minced
- 4 ounces light cream cheese
- 1 teaspoon yellow mustard
- 1 egg
- 2 tablespoons flour
- 1/2 teaspoon salt
- 1/8 teaspoon black pepper
- 1 envelope Shake ,n Bake original pork coating mix

Step 1
Place 2 cups sauerkraut in colander; drain well. Squeeze out excess liquid; set aside. In skillet, over medium heat, cook and stir sausage and onion until meat is brown. Remove from heat; add sauerkraut, cream cheese, mustard, egg, flour, salt, and pepper. Mix well; chill 1 to 2 hours. Preheat oven to 425 degrees. Form mixture into 1-inch balls. Coat each ball with coating mix. Place on ungreased baking sheet; lightly spray tops of sausage balls with vegetable oil spray. Bake at 425 degrees 10-15 minutes until cooked through. Makes 30-32 balls.
