Dear Readers: Here is a recipe for candied yams from a newspaper column dated 1979, and it still holds up today - quick, easy and tasty.
Heloise
"For delicious candied yams, try this: After peeling the yams, add sugar, oleo (i.e., margarine or butter - H) and spices as usual. Then pour pineapple juice over them and let the yams marinate overnight in the refrigerator. Next day, bake them as usual.
If you are using canned yams, pour off some of the liquid first. It's the greatest! It gives the yams a different taste and will rate raves from your family and guests."
