Ingredients

  • 4 egg yolks
  • 1/4 cup granulated sugar
  • 1/4 vanilla bean
  • 1 1/2 cups whipping cream
  • dash salt
  • 1/3-1/2 cup raw brown sugar

Preparation

Step 1

Mix egg yolks and granulated sugar in a bowl. Place cream ad salt in heavy saucepan. Slice vanilla bean lengthwise, scrape out inside portion and add scrapings and bean to cream mix. Heat to scalding. Gradually beat cream into egg yolk mix, then strain through fine sieve.

Pour into 4 ounce souffle cups. Place in pan of hot water, 1/2 way up souffle dish. Cover pan with foil. Bake 350 for 30-40 mins, til set. Cool.

top each with raw sugar and brulee. can chill, top with another tbsp sugar and brulee again before serving
