Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • coarse salt & ground pepper
  • 2 carrots quartered and diced
  • 1 bag brown lentils
  • 2 cans vegetable broth
  • 1 dried bay leaf
  • 1/4 teaspoon cayenne pepper (optional)

Step 1

In a large sauce pan, heat 1 tablespoon oil and add onion and garlic. Season with salt and pepper and cook until tender.

Add carrots, lentils, broth, bay leaf, cayenne and 3 1/2 cups water. Bring to boil; reduce heat and simmer partially covered. Cook until lentils are tender (about 20 minutes). Discard the bay leaf.

NOTE: It may be necessary to add an extra can of broth or additional water to the recipe. The lentils absorb most of the liquid over time.
