Cajun Roasted Pork Loin (Lisa's recipe)

Ingredients
- 2 Tbsp. buter
- 1/2 tea. cayenne (or more for spicier gravy)
- 1 tea. dried oregano
- 1/2 tea. pepper
- 1/2 tea. dried thyme
- 1/2 tea. ground mustard
- 2 cloves garlic, minced
- 4# pork loin roast
- salt and pepper
- 1 Tbsp. olive oil
- 2 carrots, cut into 1/2" pieces
- 1 red bell pepper, cut into 2" pieces
- 1 stalk celery, cut into 2" pieces
- 1 large onion, cut into 2" pieces
- 3 Tbsp. flour
- 1/2 cup chicken stock

Step 1
Preheat oven to 300 degrees.
Melt butter in small skillet over medium heat. Stir in cayenne, oregano, pepper, thyme, mustard and garlic. Cook for 1 minute. Using a paring knife make small slits in roast, stuff slits with spice mix, and rub remaining mix over pork roast. Sprinkle with salt and pepper.
Heat olive oil in roasting pan over medium heat. Put roast in pan and surround with carrots, red pepper, celery and onion. Lightly salt and peppper the vegetables.
Place roast in preheated oven, roast for 1 hour, 45 minutes. Increase oven temp to 425 degrees and cook additional 15 minutes to brown meat.
Remove roast from pan and let stand 10 minutes before slicing.
Place roasting pan, with pan juices, over medium heat. Whisk the flour into the hot drippings, and cook for 3 minutes. Pour in chicken stock and cook, whisking occasionally, for 6 minutes.
Strain sauce and serve with sliced pork roast.
