Patrick's Favorite Jam-Filled Oatmeal Cookies

Ingredients

• 2 c brown sugar
• 1 c shortening
• 2 eggs
• 2 t vanilla
• 1 t lemon extract
• 2 c flour
• 1 t baking soda
• 1 t salt
• 1 t baking powder
• 2 c oatmeal
• Strawberry jam

Preparation

Step 1

Mix sugar, shortening,eggs,vanilla and extract. Add dry ingredients. Mix in oatmeal. Drop 2 " apart onto cookie sheet. make thimb print in center and fill with jam. Bake at 350 degrees for 12-15 minutes.
