Ingredients
- 1¼ cups sugar
- 3 T. flour
- 4 eggs, lightly beaten
- 1 stick butter, melted and cooled
- 1 cup buttermilk
- 1 T. freshly squeezed lemon juice
- 1 tsp. vanilla extract
- zest from 1 lemon
- freshly grated nutmeg to taste (optional)
- 1 Pillsbury pie crust

Preparation
Step 1
Preheat oven to 425 degrees. Place pie crust in pie plate. Combine sugar and flour in large mixing bowl. Add the beaten eggs and mix well. Stir in the butter and buttermilk. Stir in lemon zest and juice, vanilla, and nutmeg, pour into pie shell. Place the pie in the center of oven for 15 minutes. Lower heat to 350 degrees and continue to bake for appx. 40 minutes or until filling is set. Filling may still be a little jiggley in the center but will firm up as it cools. Remove and cool on wire rack.
