Ingredients

  • 1 Tbs. butter
  • 1/4 c. finely diced onion
  • 1/4 c. finely diced celery
  • 1 oz. white wine
  • 1/2 tsp. salt
  • 1/4 tsp. white pepper
  • 1/2 tsp. thyme
  • 1 tsp. lemon juice
  • 4 oz. king, snow, or lump crabmeat
  • 1 oz. heavy cream or half & half
  • 1/2 . shredded baby Swiss cheese
  • 1/2 c. bread crumbs
  • 1/2 c. large mushrooms, stems removed
  • 16 small, thin slices baby Swiss cheese

Step 1

Preheat oven to 375 degrees F. Melt butter in medium skillet. Saute onions and celery in butter until tender. Add wine, seasonings, lemon juice and crabmeat. Simmer 3 minutes.
Add cream and shredded cheese; cook until cheese melts. Add bread crumbs. Spoon crab mixture into mushroom caps. Top with slices of baby Swiss cheese. Bake 12 - 15 minutes or until cheese is lightly browned.
