Ingredients

  • 2 cups old fashioned rolled oats
  • 2 cups flour
  • 3/4 tsp. baking soda
  • 1/2 tsp. baking powder
  • 1/2 tsp. salt
  • 1/4 tsp. cinnamon
  • 1 cup (2 sticks) unsalted butter, softened
  • 1 cup packed brown sugar
  • 2 eggs, at room temperature
  • 1 tsp. vanilla extract
  • 1 - 12 oz. pkg. white chocolate chips
  • 1 cup dried, sweetened cranberries

Preparation

Step 1

In a large bow, stir together oats, flour, baking soda, baking powder, salt, and cinnamon.
In a separate bowl, blend the butter and sugar with an electric mixer until smooth.
Add eggs and continue beating until fluffy.
Blend in vanilla extract.
Using a wooden spoon, stir the dry mixture into the butter mixture 1/2 at a time.
Mix in cranberries and white chocolate chips.
Refrigerate dough for 1 - 2 hours.
Preheat oven to 375 degrees.
Line a baking sheet with greased aluminum foil.
Shape the dough into 1" balls and place on foil 2 1/2 - 3" apart.
Use your fingertips to flatten each ball to 1/3" thick.
Bake cookies on center of rack for 10 -12 minutes, turning the sheet halfway through.
When they are done the cookies should be lightly browned and still look moist.
Cool cookies 3 minutes on sheet and transfer to wire rack.
