Ingredients

  • 1/2 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 1/2 cup shortening
  • 1/2 cup peanut butter
  • 1 egg
  • 1 1/4 cup all-purpose or whole wheat flour (If using self-rising flour, omit baking soda, baking powder and salt)
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • Jelly or jam

Preparation

Step 1

Heat oven to 375 degrees. Mix sugars, shortening, peanut butter and egg. Stir in flour, baking soda, baking powder and salt. Shape dough into 3/4-inch balls. Place 2 inches apart o ungreased cookie sheet. Bake until set but not hard, about 10 minutes.

Cool slightly before removing from cookie sheet, cook completely. Put cookies together in pairs with jelly.

*Peanut Butter Thumbprints*:
Shape dough into 1-inch balls. Roll Balls in 1/2 cup finely chopped peanuts. Place about 3 inches apart on ungreased cookie sheet; press thumb deeply in center of each. Bake 10 to 12 minutes. Fill thumbprints with jelly.
