Ingredients
- 2 pounds good shrimp
- Brine
- 1/4 ¼ cup kosher salt
- 1/4 ¼ cup sugar
- 1 cup water
- 2 cups crushed ice
Preparation
Step 1
Using scissors devein the shrimp leaving the peeling on. Brine the shrimp in a bowl for 20 to 25 minutes. Remove shrimp from the brine and drain thoroughly. Rinse the shrimp with cold water and dry on paper towels. In a large bowl, toss shrimp with olive oil and sprinkle with Old Bay seasoning.
Place a sheet pan under the broiler until hot. Place the shrimp onto the sheet pan and return to broiler. After 2 minutes, turn the shrimp and return to the broiler for another minute. Transfer to a cold cookie sheet. Refrigerate immediately.
When the shrimp have cooled, serve with cocktail sauce.
