Ingredients
- 6 oz. fine noodles
- 2 lbs. ground beef
- 1 tsp oil
- 4 cups sliced green onions
- ½ lb. fresh mushrooms sliced
- 1 lb fresh spinach washed and torn
- ½ lite soy sauce
- ¼ cup water
- 1 tsp. sugar
- 2 cups chopped celery

Step 1
Cook noodles 5 minutes and drain. Put in 3 quart casserole. Brown meat in a large skillet, add onion and cook 5 minutes. Add mushrooms and spinach. Combine soy sauce, water and sugar, and add to meat mixture. Cook until spinach is wilted. Add celery and stir. Pour over noodles in casserole. Keep warm in low oven. Before serving toss well. (a 10 oz. box of frozen spinach can be substitued for the fresh). This dish can be refrigerated and warmed later all except celery which should be stired in when reheated to keep the crunchiness.
