Ingredients
- 2 pounds sirloin steak, 1 1/2 inches thick
- 2 teaspoon coarsely ground black pepper
- 1 teaspoon arrowroot or cornstarch
- 1 1/2 teaspoon salt
- 1/2 cup canned beef bouillon, undiluted
- 1/2 cup brandy

Step 1
Slowly heat large, heavy skillet until very hot. Trim small piece of fat from steak; melt fat in skillet.
Meanwhile, rub 1 teaspoon pepper into each side of steak. Over high heat, sear steak in hot fat about 2 minutes on each side, or until well browned.
Reduce heat to medium; pan broil steak 8 to 10 minutes on each side,for medium-rare.
Meanwhile, in small saucepan, combine arrowroot and rest of ingredients, stirring until smooth. Bring to boiling, stirring constantly. Remove from heat.
Place steak on heated platter; keep warm.
Drain all but 2 tablespoons drippings from skillet. Stir in bouillon mixture; simmer 5 minutes. Pour over steak.
