- 1 Large Cauliflower
- 2 Tablespoons Olive Oil
- Sea salt
- Cracked pepper
- Toasted slivered almonds
- Lemon zest
- Lemon juice

Step 1
Cut Cauliflower into florets and toss them in a bowl with olive oil and some sea salt and freshly ground or cracked pepper. Then lay them on a large parchment paper covered shallow baking pan, making sure not to crown the pan (best when florets are not even touching).
Roast at 450F, uncovered, in the middle position, for 25 to 30 minutes, stirring and turning over occasionally, until they're crusty brown in places. Top with handful of toasted slivered almonds, lemon zest and a squeeze of lemon juice.
