Ingredients
- Preheat the oven to 425 degrees. Whisk together:
- 2 tbs. butter, melted
- 1 tsp. Dijon mustard
- Halve and hallow out, leaving ¼ inch shells
- 12 1/2 - 2 12 ½ - 2 inch new potatoes

Toss halves with butter mix. Roast potatoes, cut side down on a lightly oiled baking sheet until nicely browned, about 30 minutes.
Sprinkle with coarse salt. Turn potatoes upright and distribute equally among the skins:
¾ cup grated jack cheese
8 slices bacon, cooked until crisp and crumbles
Potatoes can be held for 2 hours, return potatoes to the oven and bake until hot, 5 minutes.
