Pressure Cooker Spanish Rice and Sausage

Ingredients
- 2 Tbs. olive oil
- 1 medium onion, chopped
- 2 medium celery ribs, chopped
- 1 garlic clove, finely chopped
- 1 lb. sweet italian pork sausage, casings removed
- 1 1/2 cups long grain rice
- 1/4 tsp. dried oregano
- 1/4 tsp. pepper
- 2 1/2 cups chicken stock
- 14 1/2oz. can of tomatoes in juice, drained and chopped, juices reserved

Preparation
Step 1
1. In a 5-7 quart pressure cooker, heat the oil over medium-high heat. Add the onion, celery, and garlic. Cook, stirring often, until the vegetables begin to soften, about 2 minutes. Add the sausage and cook, breaking it up with the side of a spoon, until it loses its raw look, about minutes. Pour off any excess fat from the cooker.
2. Add the rice, oregano, salt, and pepper and stir well. Add the stock and the tomatoes and thier juice.
3. Lock the lid in place. Bring to high pressure over high heat. Adjust the heat to maintain the pressure. Cook for 6 minutes. Remove from the heat and quick release the pressure. Stir well and serve immediately.
