Ingredients

  • 3 large eggs
  • 1/2 cup buttermilk
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • 3 green onions finely chopped
  • Dash of hot sauce
  • 6 (1" thick) slices white bread cut diagonally in half
  • 2 cups instant potato flakes
  • 6 tablespoons butter or margarine

Step 1

Combine first 7 ingredients, dip bread triangles in mixture and dredge in potato flakes. Melt 2 tablespoon butter in a large skillet, add 4 bread triangles and cook over medium low heat until golden brown. Remove from pan, keep warm. Serve immediately.
