- Crust:
- 1 1/2 Cups Graham Cracker Crums
- 1/4 Cup Sugar
- 6 Tbsp Melted Butter
- Filling:
- 5 (8oz) bars of Cream Cheese room temperature
- 3 Tbsp Flour
- 1 3/4 Cups Sugar
- 3 Tbsp Vanilla
- 6 whole Eggs
- 1/4 Cup Heavy Cream
- 3 Tbsp Lemon Juice

Step 1
Filling:
Combine crumbs, sugar and melted butter, mix to moisten.
Press mixture into a 10" spring form pan.
Chill in refrigerator while preparing the filling.
Filling:
Pre heat oven to 500 degrees.
Cream the cream cheese until soft and fluffy. Beat in flour a little at a time. Beat in vanilla, cream, lemon juice and eggs one at a time. Beat well between additions.
Pour mixture into the pan (can make a water bath) bake at 500 for 12 minutes. Turn ovent to 200 and bake for 50-60 minutes. Check to see if the center is set. turn off oven and leave in for 15 minutes.
Remove and cool for 1 hour. Refridgerate for 5 hours before serving.
