  • 1 lb. Fettuccine
  • 1 stick of butter
  • 3/4 of Half and Half (that should be around 3 pints)
  • 1 1/2 cups Grated Parmesan Cheese
  • 1 egg yolk beaten
  • pinch nutmeg

Step 1

In a saucepan melt butter. When butter is almost totally melted then add cream stir. When cream begins to simmer, mix in small amounts of cheese stirring constantly until all cheese is added. Remove from heat. Add egg yolk. Put back on med low heat about and stir constantly about 3 to 5 minutes until sauce has reduced a little. It should be thick and easily cover back of spoon. Add nutmeg. Stir before pouring over pasta

Bring a pot of water to a boil. Add salt and little oil. (oil so pasta does not stick together). Cook al dente, drain thoroughly. Add sauce and mix thoroughly until fettuccine is well coated.
