Ingredients

  • 1 tablespoon vegetable oil
  • 4 slices bacon finely chopped
  • 1/2 medium onion finely chopped
  • 2 cloves garlic minced or grated
  • 1 chipotle pepper with sauce from a can of La Morena chipotle peppers in adobo sauce chopped * see note
  • 2 tablespoons La Morena pickled jalapeno peppers chopped
  • 1 - 15 ounce can tomato sauce
  • 2 tablespoons honey
  • 1 tablespoon apple cider vinegar
  • Salt and freshly ground pepper

Instructions

Add the bacon to a large saucepan and cook over medium heat until the fat is rendered and bacon cooked.

Remove the bacon from the pan and reserve the oil.

With the heat still on medium, add the chopped onions to the oil and cook until softened.

Add the garlic and cook for 1 minute.

Add the chopped chipotle pepper, adobo sauce, jalapeños, tomato sauce, apple cider vinegar and honey, stir well.

Simmer for 10 minutes until thickened.

Taste and adjust for salt and pepper. ** see note

Allow the sauce to cool for 5 minutes, then transfer to a food processor or blender with the cooked bacon.

Blend until smooth.

Transfer to sterilized jars with lids and refrigerate for up to 2 weeks.
