Ingredients
- 3/4 cup brown rice
- 1 tsp. sesame oil
- pinch salt
- 1 1/2 cups low-fat, low sodium chicken stock
- 2 boneless skinless chicken breasts, chopped
- 1 cup sliced mushrooms
- 2 green onions, chopped
- 2 carrots, diced
- 1/2 cup celery, sliced
- 1 cup cooked chickpeas
- 1/4 cup light soy sauce

Preparation
Step 1
In pan, bring rice, salt and 1 1/4 cups of the stock to a boil. Reduce heat to low, cover and cook for about 25 mins. or until liquid is absorbed. Fluff with fork and set aside. In large pan, heat oil over med-high heat. Cook chicken and mushrooms for about 8 mins. until chicken is cooked. Add onion, carrots, celery, chickpeas and cooked rice. Cook, stirring, for 2 mins. to combine. Add remaining stock and soy sauce and cook for 5 mins.
