Ingredients

  • 1 pound ground beef
  • 1 pound ground pork
  • 1/2 medium onion
  • 2 cloves garlic, minced
  • 1.5 ounces Gruyere cheese, grated
  • 1 large egg
  • 1/2 cup panko
  • 1/4 cup whole milk
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon honey
  • 1/2 teaspoon salt
  • 2 teaspoons soy sauce
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon pepper
  • 6 ounces thick cut bacon
  • 3 tablespoons ketchup
  • 1 tablespoon honey
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon Dijon mustard

Step 1

Preheat oven to 350 degrees
Add beef, pork, onion, garlic, panko, Gruyere, egg, milk, tomato paste, Worcestershire sauce, honey, soy sauce, smoked paprika, salt, and pepper in a bowl. Mix together.
Shape the meat mixture into a loaf. Top with bacon, slightly overlapping each slice.
Bake for 30 minutes. While the meatloaf is cooking, make the glaze by mixing ketchup, honey, Worcestershire sauce and mustard in a small bowl to combine.
Remove the meatloaf and cover with the glaze. Return to the oven and cook for another 20-30 minutes or until a thermometer reads 160 degrees.
Remove from the oven and let rest for at least 15 minutes.
