Ingredients

  • 1 onion, chopped
  • 1 green pepper, chopped
  • 2 cloves garlic, minced
  • 1 package fresh mushrooms, chopped
  • 1/3 C fresh parsley, chopped
  • 12-16 oz (dry) ziti or like pasta
  • 1 can cream of chicken soup
  • 1 (8oz) package cream cheese
  • 1 C chicken broth
  • 2 C cooked chicken
  • 1 C cottage cheese
  • 1 1/2 t basil and oregano
  • 1 large package shredded cheddar cheese
  • 1/2 C grated parmesan cheese
  • 1 t olive oil

Step 1

Put oil in large Dutch oven. Heat, add onions, peppers, and garlic. Saute until tender. Add mushrooms and parsley. Saute 2-4 minutes. Mix in soup, cream cheese, and broth until cheese has melted. Stir in cottage cheese, cooked chicken, and spices. Spray one very large or two small casseroles with cooking spray. Layer pasta, chicken-sauce mix, then cheeses ending with cheese. This should sit in the refrigerator 24 hours or not! Bake at 350 degrees for 35 minutes covered, then 15 minutes uncovered.
