  • 2 1 ¼-to 1 ½-pound Cornish game hens, halved lengthwise
  • Salt
  • ½ cup bottled hoisin sauce
  • ¼ cup raspberry or red wine vinegar
  • ¼ cup orange juice
  • 1 to 2 teaspoons red chili paste

Step 1

1. Preheat oven to 375°F. Sprinkle hens with salt. Place hens, breast sides up, on a rack in a shallow roasting pan. Cover loosely with foil. Roast for 80 minutes.

2. Meanwhile, in a small bowl, stir together hoisin sauce, vinegar, orange juice, and red chili paste. Brush some of the hoisin sauce mixture over hens.

3. Roast, uncovered, for 45 to 60 minutes more or until chicken is no longer pink (180°F), brushing occasionally with the remaining hoisin sauce mixture.
