Ingredients

  • 1-1/2 quart of water
  • 4 beef bullion cubes dissolved in water
  • -or-
  • 1 large container of beef broth
  • 1 onion - chopped
  • 1 tsp olive oil
  • 2 carrots - chopped
  • 2 celery sticks - chopped
  • 1 14-1/2 oz can of chopped tomatoes
  • 1 large potato - chopped
  • 1 pound dried lentils

Preparation

Step 1

Soak lentils 24 hours changing water as needed. Boil until slightly soft and drain.

Saute onion in olive oil. Place all ingredients in large crockpot and mix well. Cover and cook 8 hours stirring occasionally.
