Ingredients
- 1 large onion, thinly sliced
- 2 tbsp extra virgin olive oil
- 2 large tomatoes, pealed and coarsely chopped
- 1 tbsp chopped fresh parsley
- 1 tsp pepper
- 3 cloves minced garlic
- 2 lb. large shrimps, de-veined
- 3oz. light feta cheese, crumbled
- 1 tbsp fresh parsley

Preparation
Step 1
Heat olive oil in a large skillet over medium-high heat. Sauté onions until tender. Add tomatoes, chopped parsley, pepper and garlic. Cover and simmer for 20 to 25 minutes, stirring occasionally.
Add sauce in ovenproof dish. Top with shrimps and crumble feta cheese over. Bake uncovered at 350F for 10 to 15 minutes or until shrimp are cooked and cheese is melted. Garnish with parsley.
