Ingredients

  • Filling:
  • 1 c almond flour
  • 4 TBS xylitol
  • 1/4 tsp baking powder
  • 1/4 tsp sea salt
  • 1/2 c coconut oil cold
  • 1/2 beaten egg
  • 1 1/4 c tart cherries Or peaches Or apples (add cinnamon) Or berries
  • 1/4 c xylitol
  • 1/8 tsp almond extract
  • 1 TBS arrowroot

Preparation

Step 1

Filling:
Add all ingredients in a sauce pan and cook over med heat stirring until gets thickened. Remove and let cool some. If using other fruit than tart cherries lesson the xylitol just a little.
Strudel:
Add all dry ingredients to a bowl and then cut in coconut oil. After crumbs form add 1/2 beaten egg and cut in as well should still be like crumbs. Grease 1/4 size baking sheet pan with coconut oil. Press 2/3 of the crumb mixture to the bottom and side of pan. Do not work with it too much or it will stick to your fingers. Pour Fruit filling ontop of crust and sprinkle with remaining 1/3 crumb mixture. Bake at 350 for 40 minutes.
