Ingredients
- Marinade:
- Juice of 2 limes
- 3 tbsp olive oil
- 2 tsp brown sugar
- 1 tsp ground cumin
- 1/2 tsp freshly ground black pepper
- 1/2 tsp salt
- Salad:
- Baby spinach leaves
- red onion
- red pepper
- kalamata olives
- tomato wedges
- sliced avocado
- Mango Salsa:
- 1 large mango, peeled and diced small
- 1 clove minced garlic
- Juice of one lime
- Zest of one lime, finely chopped
- 1/2 red onion diced
- 1 tbsp finely chopped jalapeño pepper
- 1 tsp salt
- 1/2 tsp coarse ground black pepper
- 1 tsp ground cumin
- 1 tbsp brown sugar
- 1/4 cup chopped fresh cilantro
- 1/2 red pepper diced small

Preparation
Step 1
Mix marinade ingredients together and marinade 4 boneless chicken breasts in a sealed plastic bag for 1/2 hour. Mix ingredients for salsa together and chill for at least 2hours. Grill or broil chicken until fully cooked. Rest the chicken for 5 minutes before slicing and serving on a bed of spinach salad.
