COCONUT RICE WITH GINGER

Ingredients
- 2 tbsp butter
- 1 clove garlic, minced
- 1 1/2 tbsp ginger, minced
- 3/4 cup long grain rice
- 1/2 cup coconut milk
- 1 cup water
- Salt and freshly ground pepper
- 1/2 cup raisins
- 1/2 cup pistachios

Step 1
Heat the butter in a one-quart saucepan over medium heat. Add garlic and ginger and saute until aromatic, about 2 minutes. Add the rice and stir until the rice is well coated with butter, about 1 minute. Add coconut milk, water, salt and pepper and bring mixture to a boil.
Reduce the heat to low, cover and simmer until tender, about 20 minutes. Let rice stand for 5 minutes, then fluff with a fork to separate the grains. Stir in raisins and pistachios.
