Ingredients
- 6 medium potatoes, peeled and sliced
- 2 carrots, diced
- 6 celery stalks, diced
- 2 qts. water
- 1 onion, chopped
- 6 Tbsp. butter
- 6 Tbsp. flour
- 1 tsp. salt
- 1/2 tsp. pepper
- 1-1/2 cups milk

Step 1
Cook potatoes, carrots and celery in water until tender, about 20 minutes. Drain, reserving liquid and setting veg. aside. Saute onions in butter until soft, add flour, salt, pepper; add milk gradually until thickened. Add vegetables and 1 cup of reserved cooking liquid until soup is desired consistency.
