Lentil and Sausage Soup

Ingredients
- 2 tsp olive oil
- 2 carrots, thinly sliced
- 1 onion diced
- 1 cloves garlic, minced
- 1/4 lb turkey kielbasa, thinly sliced
- 1 1/4 cup brown lentils, picked over and rinsed
- 5 cups water
- 1 (14 1/2 oz) can diced tomatoes
- 1/2 tsp salt
- 1/4 tsp black pepper

Preparation
Step 1
Heat oil in a large saucepan over medium heat. Add carrots, onion and garlic. Cook, stirring frequently until softened, about 5 minutes. Add kielbasa, lentils and water. Bring to boil. Reduce heat and simmer until lentils are tender, about 30 minutes. Stir in tomatoes, salt and pepper. Simmer until heated through, about 5 minutes longer.
