Sweetheart Cranberry Scones

Usually when its Winter time, I think of warm beverages, fireplaces and sweets that are on the comforting side. We’ve been making these yummy cranberry sweetheart scones for years at my house. They’re sweet, tart, buttery and so good with tea! I kinda feel a little British while eating these.. no but really I do. Don’t make fun of me!
Plus these yummy scones are so easy to make and require so few ingredients, that there is no way to resist them! Having unexpected guests or in the mood for a sweet treat that can serve as breakfast, snack or dessert but don’t want to spend a whole lotta time making it? Then this is definitely for you!

Ingredients
- 2 cup + 2 tbsp flour
- 1/3 cup + 2 tbsp sugar
- 1 tbsp baking powder
- 1/2 teaspoon salt
- 6 Tablespoons chilled unsalted butter cut into 12 pieces
- 2/3 cups dried cranberries
- 1 cup heavy cream

Step 1
1. Preheat oven 400 degrees. In a large bowl combine 2 cups flour, 1/2 cups sugar, baking powder, salt and butter mix with a fork/butter cutter. This process must be done rather quickly, as it needs to stay cool. Mix until it resembles coarse meal. Then add the cranberries and heavy cream. Quickly mix until incorporated and resembles a dough.
2. Using the remaining 2 tbsp flour, lightly dust a clean surface and transfer doug. Roll out the dough gently using a rolling pin into a ½ inch thick disk. Using a cookie cutter (or in my case the top of a regular drinking glass) cut our circles (should be about 1/3 cup size wide. Place scones on on un-greased baking sheet. Sprinkle tops with remaining 2 tbsp sugar. Bake until golden brown 15 minutes.
Makes about 12 scones
