- 1/2 cup balsamic vinegar
- 1 tsp. fresh lemon juice
- 1/4 tsp. freshly ground black pepper
- 1/8 tsp. sea salt
- 4 cups mixed salad greens
- 1/2 pound honeydew melon, peeled, seeded and thinly sliced
- 1/2 pound cantaloupe, peeled, seeded and thinly sliced
- 1 pound turkey bacon, cooked
- 4 fresh figs, quartered

Preparation
Step 1
Bring the vinegar to a simmer in a small saucepan over medium-low heat. Cook until it's syrupy and reduced to 3 tablespoons (about 8 minutes), stirring occasionally. Remove the pan from the heat.
Whisk together the lemon juice, pepper, and salt in a large bowl. Add the salad greens and toss gently. Divide the melon among four plates. Top with the salad greens. Arrange the bacon and figs over the salad greens. Drizzle with the balsamic syrup.
