Ingredients
- 1/2 lb chorizo
- 3/4 lb chicken, cubed
- 1 onion, chopped
- 4 garlic cloves, minced
- 1/2 t red pepper flakes
- 1 bay leaf
- 4 thyme sprigs
- 1 lb shrimp, peeled and deveined
- black pepper
- 2 1/2 c chicken stock
- 1 t turmeric
- 1 t saffron
- 2 c couscous
- 1 c peas
- 1 lemon, zested
- 1 roasted red pepper chopped

Preparation
Step 1
1) Brown chorizo and chicken. Add onions, garlic, red pepper flakes, bay leaf, thyme, shrimp, and black pepper. Cook 4 min.
2) Add stock, turmeric, and saffron. Boil.
3) Stir in couscous, peas, lemon zest, and pepper. Cover and turn off heat. Let stand 5 min then fluff with fork.
