Ingredients
- DRESSING:
- 1 whole wheat pita or 1 PC mini Naan round, toasted until crisp and broken into pieces
- 1 pickling cucumber
- 8 cherry tomatoes
- 4 pepperoncini peppers, sliced
- 1/4 cup chopped sweet peppers
- 1/4 cup chopped parsley
- 2 tbsp. chopped fresh mint
- 1 heart of romaine lettuce, shredded
- 3 green onions, sliced
- 2 cloves garlic, minced (or 1/2 clove grated)
- 1/4 tsp. sumac
- 1/4 tsp. cumin
- 1 pinch red pepper flakes or Aleppo pepper
- 1/2 tsp. dried oregano
- 2 tbsp. best extra virgin olive oil
- 1 - 2 tbsp. lemon juice (try 1 tbsp. first, then add more, if necessary)
- sea salt and freshly ground pepper to taste
