Ingredients

  • 750 grams pastry flour, sifted
  • 500 grams shortening
  • 250 ml cold water
  • 15 grams salt
  • 30 grams brown sugar

Step 1

Rub shortening into the flour until shortening is reduced to irregular sized pea crumbs. Dissolve salt and sugar in water. Mix water into the flour mix all at once; mix just until incorporated. Do not over mix. Cover and allow dough to rest a few minutes.

*Under working the dough will produce dry, tough dough. Overworking the dough will produce mealy dough. Always keep dough rather cold, it will firm up the shortening and makes the dough handling easier.
