Ingredients
- 1 Tbsp olive oil
- 1 medium red pepper chopped
- 1/2 c chopped yellow onion
- 1/2 pound cooked or raw shrimp cut in pieces
- 2 c fat free half and half
- 1 c no salt added tomato sauce
- 1/4 tsp hot sauce
- salt and ground pepper to taste
- 1 tsp butter
- 1/4 c grated Parmesan cheese

Step 1
In saucepan, heat olive oil. Add red pepper and onion. Saute on low heaat until soft, 15-20 minutes, stirring occassionally. Add shrimp and half and half, tomato sauce, hot sauce and salt and pepper. Bring to a boil, reduce heat and simmer 5 minutes. Add butter.
Pour 1/2 hot mixture in blender and process at high speed until no large pieces. transger to soup bowls and repeat with remaining mixture. Sprinkle Parmesan cheese on top. Garnish with extra shrimp.
