  • 1 lb breakfast sausage
  • 8 oz diced ham
  • 1/2 cup fresh chopped mushrooms
  • 1 cup chopped onions
  • 1 (10 oz) can Rotel tomatoes
  • 18 eggs
  • 1 cup cheese
  • 1 32 oz pkg frozen hash browns
  • salt and pepper
  • fresh baby spinach (couple handfuls)



Step 1

Lightly brown sausage, should still be partially raw
Layer half of the hash browns in the bottom of the slow cooker, followed by half of the sausage and half of the ham
Next layer will be all of the spinach, the mushrooms, and onions
Repeat first three layers and then top with cans of tomatoes
Whisk the 18 eggs in a bowl, then pour over top
Sprinkle cheese on top and cook on low for 8 hours in a 6 qt slow cooker
